Does anybody know how to get the MD8 to record a regular stereo signal in STEREO? Everything I try comes out mono. Ive tried about 100 different combos with no luck.

Know nothing about that machine, but the on-line manual says it has 'record modes' for 8, 4, 2 and mono in/out, which you set by the data wheel. Perhaps you have the mono mode selected? Or you have the L+R channels panned centre (when they should be hard left and right respectively). Or (a wild guess) something in the monitoring section is set wrong.

To record a "regular stereo" signal, I think you may well have to split the source signal into two inputs on your MD8 (using a "Y" cable or connector), and set the pan control to the centre for both channels so that you get the stereo effect from the source. Use a regular MD.
