Anyone cooking this weekend?

I was cooking for an old friend tonight. We've not seen her for a few years and as she's in the area - I said come to ours and I'll cook. This morning she texted to say brilliant see you at 6 - you remembered I'm vegan, but does dairy and fish? Funny kind of vegan. My usual choices are therefore out of the window! SO stop this talk of BBQ and beef and pork, because that is not on the menu. I wish!

I like to cook but run into issues where I don't always have time. A couple years ago I picked up a chamber vacuumn sealer. We do a lot of fishing and it is the best way to freeze fish. This made it easier for me to cook large batches of something and seal & freeze them for a convenient meal later. Two weeks ago I did a big pot of chili and cutlets for chicken Parm. This week, Shakshuka, Spaghetti sauce with meatballs and sausage, food truck style chicken and rice and Sunday will I'll be doing a pot roast. Freezer always has something we can just heat and eat from soups and stews to lasagna.
